Figuring I had to the end of the month (a.k.a. today), I was hoping to boast that I made it to Souped Up Cafe one last time. But darn it, I was ten days too late. It appears their website will be up for a while so you can contact them and lament their closing. Assuming the website isn’t around forever (and this blog is), I’m reprinting the delicious pannini menu for posterity’s sake:
- Best Grilled Cheese – Swiss cheese, cheddar, and brie on baguette toasted to perfection.
- Caprese Grilled Cheese – Tomato, basil, and fresh mozzarella with basil pesto on rustic sourdough.
- Chipotle Chicken Sandwich – Pulled chicken braised in our sweet and spicy chipotle sauce, shredded cheddar cilantro, and red onion threads on ciabatta.
- Ham and Swiss – Cob-smoked ham, caramelized onions, swiss, garlic butter, and stone-ground mustard.
- Traditional Panino – Salami, olive tapenade, roasted bell peppers, whole basil, and fresh mozzarella on herbed focaccia.
- Tuna Melt – Our own delicious tuna salad, hearty slices of tomato, and Tillamook cheddar on sourdough.
- Turkey and Gorgonzola – With jack cheese, thinly sliced Granny Smith’s and apricot marmalade on sourdough.
